Eat legumes in summer

Legumes are a basic pillar of a healthy diet, and most babies start taking them after 12 months. After two years, when they already eat the same as the elderly (as long as we talk about healthy meals and when there are no cases of allergies), the whole family takes the vegetable dishes.

In summer, instead of eating hot legumes, we can rehearse cold vegetable dishes. Here are some examples.

  • Chickpea salad. Having previously prepared the vegetables by cooking them, we let them cool. Then mix with pieces of raw vegetables to taquitos such as tomato, cucumber, carrot, pepper, corn ... and hard boiled egg. If we want to add some meat, better not to choose sausages or meats that are too fatty, difficult to digest, and opt for turkey, chicken or ham taquitos. It can also be mixed with tuna, if you like the combination, which seems great to me.

  • Bean Salad (Beans). It is prepared the same as before. It can be done with white beans, pints or red, in delicious combinations.

  • As they are cold, these salads can be seasoned with a little mayonnaise, although raw olive oil is healthier, and you can give it a touch of vinegar or lemon.
