Our Roscón de Reyes

Although now may not be (nor are there norms) the time to make a Roscón de Reyes, we assure you that with the same dough you can enjoy some delicious brioches. The day before you must prepare the sourdough, for this you need 100 grams of strength flour, 100 milliliters of warm milk, and 40 grams of fresh yeast. Mix all the ingredients and let them stand in a covered bowl and in a cool place until making the roscón dough. To prepare the dough you need 570 grams of flour, 170 grams of sugar, ½ teaspoon of cinnamon, the grated skin of an orange, the grated skin of half a lemon, 100 milliliters of milk, 125 grams of butter, 1 tablespoon of water orange blossom (for sale in pharmacies), 3 eggs and a pinch of salt. With these ingredients you will get a very large or two normal roscón, you can also make like us, a roscón and a few brioches.

Start mixing (you can do it in the kitchen robot) the sugar the cinnamon and the skin of orange and lemon, crush until it becomes powder. Then add the milk, orange blossom water, softened butter, eggs and a pinch of salt, mix all the ingredients well and then add the sourdough and flour, knead for at least five minutes on a clean surface. You will need a trowel to unhook the dough, you don't have to add more flour to get a suitable dough.

Make a ball with the dough and let it rest for an hour, and two if you can, in a bowl covered with transparent film. After that time knead again, spread your hands with oil to better handle the dough. Also coat the oven tray with oil. You could let the dough rise another hour if you have time, if not, the result will not disappoint you either, put the dough in the oven tray and give it the shape of a roscón (at this time it would put the figure of the king and the bean) , let it stand while you preheat the oven to 180º C.

To decorate you can use candied fruits, almonds, pine nuts ... in addition to a little sugar moistened with water and a beaten egg.

Before introducing the roscón in the oven, distribute the fruits to decorate, the moistened sugar and paint with the beaten egg. Let cook half an hour, after this time remove the roscón from the oven and let cool. Once cold you can fill it with cream, custard, angel hair, chocolate mousse ...
