Special Infant Feeding: recipes for children between one and two years (II)

Our Special on Infant Feeding continues, this time, with recipes for children under two years, introducing some foods that it is preferable not to have given them before the year (eggs or tomato) and others that, for different reasons, we will not include up to 18 months.

Eggs with tomato

The eggs will start from the year, little by little, because they are allergenic foods. It is usually advised to put the yolk in a soup first, although I have to say that its taste does not usually like some children too much. But when they eat egg, it will be a common product as a main dish or by introducing it into the composition of other recipes.

Today's dish, rich in protein and with vegetables full of vitamins and fiber, they surely love it and also, as is our intention, it serves for the whole family's food, it is very complete: Eggs with tomato, potatoes and peas.

First, we will cook some potatoes, very clean and beautiful, with little water and we will puree with them, adding a little milk whenever the child is not intolerant to cow's milk.

Meanwhile, we will have taken some well-washed tomatoes, ripe and removing the seeds, and steam them with an onion, then crushing them. The resulting sauce is not a fried tomato, but it closely resembles its flavor. When the children are older, we can simply make the tomato, instead of cooked, fried with little oil once the onion is fried.

Separately we will cook some peas, which will give the green note to this colorful dish.

The eggs are simply cooked. You have to use fresh eggs, with the whole shell and clean on the outside. Then we will cut them into thin slices. It is important, especially with children, extreme safety measures in the preparation of eggs.

To assemble the dish we will put the potatoes, the tomato and on top, the cooked egg, and we can even nap it with a béchamel sauce. For those who are allergic to tomato, which is one of the products that can cause reactions in children, we can change the sauce for one made by crushing carrots or squash, which achieve the contrast of colors equally.

Salmon with garnish

Another delicious and adjusted price dish is the salmon with garnish, which allows us to include blue fish without having to fight with the thorns or the problem of mercury accumulated by larger species such as tuna or swordfish.

The ideal salmon is the one that is already presented in clean loins, although, if we use slices, they will be rich, but we have to clean them with extreme care for the little ones. We will avoid the strong smell of this grilled fish with the preparations I propose.

We can make the salmon in the oven, on a bed of onion or in a casserole that does not stick, stirring very chopped onion in a tablespoon of virgin olive oil and then covering the fish with orange juice, letting the caldito reduce by cooking it uncovered and soft fire.

The ideal accompaniment is white rice and steamed broccoli branches.

Homemade cake

If we have decided that it is time to give our child sweets, nothing better than to make them at home, controlling all the ingredients. There are special sponge cake recipes for people who can not take gluten (wheat), milk, or eggs, and later we will offer them, but now we will talk about the typical Homemade cake, healthy and delicious, ideal for breakfast or snack.

The simplest recipe has a yogurt, 3 measures of flour (the measure will be the glass of yogurt and can be integral), 2 measures of sugar (preferably that is organic and integral cane, which has fiber, vitamins and minerals), a small glass of virgin olive oil and four eggs and a sachet of chemical yeast, being able to add a bit of lemon or orange scratch to flavor it, but it will also be rich as is.

We can put a very chopped apple in it, and this is our favorite, striped coconut (in that case we will reduce the amount of oil, in fact, we do not even put it and it is equally rich).

Well beaten everything and with the whites about to snow when adding them, we will put it in a greased dish and baked at 180 degrees approximately one hour. There is no better bauble than this.

I have lacked some delicious dishes that can be eaten by children of one year and that are optimal for them to accompany us to the table, achieving the goal of joining nutrition, enjoyment and family communication, in the next topic I think I will dedicate myself to them, because legumes, which can already be eaten, must become one of the usual dishes at the family table.
